I have this idea for halloween with my horse...?

I wanted to be The headless horseman, from sleepy hollow, problem is... it's going to be dark outside and I wanted to have a Glowing Jack-o-lantern and my horse isn't used to riding in the dark. She's also a pinto!! What could I do to make her black??!! Any suggestions??
